| It was the day after Christmas in 2004, when an undersea earthquake caused the worst tsunami in recorded history. Several hundred thousand people died throughout Southeast Asia. Among the worst hit locations was the island resort of Phuket in Thailand. Almost totally destroyed, the city suffered massive loss of life, with every building severely damaged or totally destroyed, often wiped clean from the face of the Earth. |

| Dependent upon tourism, Phuket had to rebuild. The local citizenry required as much help as possible to recover. Government, civic and even the United Nations were committed to rebuilding the entire region. Property owners had grave difficulty locating proof of ownership of land, but through much assistance from the Thai government, within months, things were being reorganized. After about six months, Epicurus was invited to open an office in a renovated space over a shop. We sent out a small team and hired several locals with experience in restaurant management. The local government helped to coordinate between those seeking to assist in the rebuilding and those with the resources to make things happen. Epicurus fell into the latter. |

| Working with local architects, engineers, and a new client, we planned a new restaurant intended to service the needs of tourists, already beginning to come back, albeit slowly. We were charged by both our client and the Thai government with the monumental task of rebuilding supply lines, organizing labor to staff the restaurant from an emotionally devastated population and finding the resources to build and outfit a full-service restaurant.
The task of locating food to supply the restaurant, and the ability to import the items needed to set up the establishment from flatware to kitchenware was a daunting one. Farms were just recovering and shipping services were still being re-established, when Epicurus structured the full plan for the new eatery. The architect was shocked when we established an opening day schedule four months earlier than projected by the government.
The glorious day came when the restaurant opened. Thirty five employees help run the white-tablecloth establishment serving a fusion of Thai and French cuisines, with some Chinese and Malaysian influences. With a magnificent view, the restaurant now serves an average of 230 covers per day, with great financial success.
Heavy concentration on fresh seafood enabled Epicurus to develop a magnificent menu in short time and establish the restaurant more than 45 days earlier than any other in the community. We are extremely proud of our Phuket team and our US training team who helped expedite the development. |
